Five Safety Tips for Steam Juicing with the Mehu-Liisa Steam Juicer

Here are 5 tips that will keep your steam juicing sessions with the Mehu-Liisa steam juicer from Finland safe and secure:

1. Use a steady boil not a furious boil.

All you need is a steady boil (medium to medium-high heat) to produce enough steam to process your fruit. A full pan of water will easily last up to an hour at this rate. If you use a furious boil (high heat) you will produce a lot of steam that will result in excess condensation inside the juicer which can water down the juice. Also, you will run the risk of boiling the water pan dry and damaging it and your range top.


2. Keep the hose clamped off.

It is best to keep the hose clamped off and out of the way during processing. It can be conveniently hooked to a handle when it is clamped off. Don’t be tempted to keep it open and hooked to a handle. It’s amazing how fast you can drain the contents of the juice kettle when an open hose falls off the handle! I speak from experience; scalding hot grape juice flying through the air and flooding the floor is an awesome, awful sight.

3. Tip lid toward you when checking on fruit to vent steam away.

When you lift the lid to check on the progress of the fruit, be sure to tip the lid toward you so that the steam escapes toward the back and away from your face.

4. Keep your jars hot in the oven to avoid breakage.

After you sanitize your jars by washing them in hot soapy water or running through the dishwasher, consider keeping them hot in the oven at 200 degrees. This will keep the jars from possibly breaking when hot juice hits the glass. Most canning jar brands are good and durable, but if there is a breeze in the kitchen, or if you are working outdoors in cool weather, this can lead to a broken jar and hot juice leaking out onto the floor.

5. Place your jars in a pan and/or on a stool when drawing off juice.

Consider using a pan in which you place your jars for drawing off juice. Setting this pan on a stool is extra safe and sturdy. This way you can focus your attention on the hose and getting the juice where it needs to go. The pan will catch any juice that spills out of the hose. Once the jar is full, bring to your covering station and remove with canning jar tongs and put the lids in place.
